Making Creamed Honey

    Hi all - I have some honey that is starting to show crystallization.  I made a small batch of creamed honey without a starter - it still seems pretty runny to me.  For those of you who make creamed honey, how long do you let the stand mixer run?  Do you begin with a starter or no?  Thanks!

    Happy New Year,

    I use equal parts of liquid honey and crystallized honey together in a blender for 15 minutes. Longer if you want it creamier.  Good luck and hope to see you soon.

    From my experience and I use a seed for about 50/50 mix - I did NOT warm or heat my honey but I think that would help.   

    Also you are mixing to break up crystals into tiny fragments rather than frothing and introducing air into the honey.  Mix for longer and at slow speed to avoid air.   

    Also as an FYI - I burned out my wife's Kitchenaid mixer doing a batch (it was old and I will not take full responsibility- but I was probably my fault) but needless to say it gets heavy and thick which requires a powerful motor to churn through it. 

    And yes for anyone that wants to know - she got a brand new one from my honey sales proceeds that year.

    I have been placing my crystalized honey in jars in my crockpot on low.  I have the jars labeled already so I did not want to mess up the labels with hot water. The crystals disappear pretty quickly.
